If you’re looking for a good one pot meal to enjoy on a cold winter’s night, try my recipe for vegetarian chili. It’s an excellent source of protein, fiber, and more. Plus, it’s a bargain, costing just a few dollars to make—and providing enough leftovers to enjoy on a second, or third, night. It also freezes well.

Vegetarian Chili

1½ cup water
1 cup rice
2 cans of beans, rinsed and drained (kidney, pinto, black, etc.)
2 cans diced tomatoes, with liquid
Chili powder to taste

Bring the water to a boil in a large saucepan. Add the rice, return to a boil, then reduce heat to a low simmer, cover tightly, and cook for 20 minutes or until all the water is absorbed. When rice is done, let rest for 5 minutes, then stir in the beans, tomatoes, and chili powder. Return to the heat for a few minutes to warm up the chili. Makes 8 1 cup servings.

Now it’s your turn: Do you have a healthy, one-dish meal you enjoy in the winter?
