This Labor Day Serve Up Life-Lengthening Fare

Here in Texas Labor Day is a down-home celebration, with barbecues happening in nearly every backyard. Everyone reconnects, telling stories of their summer travels. Plus, one of our favorite traditions in my house is to serve up Mediterranean Summer Salad as a side-dish.
Not only does it include tomatoes which are rich in the antioxidant lycopene which helps protect against prostate cancer and asthma, it contains sardines which are the ultimate long-life food.
Mediterranean Summer Salad
1 can tomatoes, drained and de-seeded
1 can whole sardines
1 can artichoke hearts
1 can hearts of palm
Italian dressing to taste
1 box croutons
2 T sunflower seeds
In a medium sized bowl, mix the tomatoes, sardines, artichoke hearts, and the hearts of palm together. Add Italian dressing to taste and top with croutons and sunflower seeds. (Serves 2 as a meal, or 4-6 as a side dish)
