Quick-Fix Dinner: Easy Broiled Chicken

One troubling fact of modern society is that we’ve become dependent on fast food. Many people think nothing of picking up a bucket of fried chicken and calling that dinner. Unfortunately, those meals are filled with more fat and sodium than most people should be eating in a day, never mind a single meal. So, I thought I’d share a recipe for a healthy, quick dinner you can make at home.
Easy Broiled Chicken (serves two)
Ingredients:
Two boneless, skinless chicken breasts (about 4 –5 oz. each)
¾ cup extra virgin olive oil
¼ cup cilantro, chopped
Freshly ground pepper to taste
8 oz. brown rice, cooked
Directions:
Marinate chicken breasts in olive oil for at least two hours. Add chopped garlic and cilantro (or any herb of your preference) for added flavor. Remove from marinade, place on a broiling pan, sprinkle with pepper and broil on each side for about 4–5 minutes, or until cooked through. Serve with brown rice.
